Southern Hoe Cakes, similar to corn bread, is a kind of fried bread made with corn meal, flour, eggs, and buttermilk, then fried in bacon drippings. Southern Hoe cake is a staple in the south, often served with greens and beans.

What are Hoe Cakes?

Hoe cakes are very similar to cornbread, the only difference is how they are prepared. Instead of being baked like corn bread, hoe cakes are fried on the stove stop.


Hoe cakes was an early American staple food. They have many different names such as johnnycake, Johnny bread, spider cornbread, and fried corn bread.

Equipment:

Ingredients:

self-rising flour

self-rising cornmeal mix

sugar

salt

buttermilk

eggs

vegetable oil

bacon drippings– If you don’t have bacon drippings on hand, you can use vegetable oil, it will work just fine.

Instructions:

Combine flour, cornmeal, sugar, and salt into a medium mixing bowl.

In a separate bowl combine buttermilk, beaten eggs and vegetable oil. Pour the wet ingredients into the bowl of dry ingredients. Mix everything together.

Heat a cast iron skillet or non-stick skillet. Add the bacon grease.

Pour 2 tablespoons to ¼ cup of batter into the pan at a time to form hoe cakes.

Cook until bubbles form on the top, flip over and cook until the bottom is golden.

What to serve Hoe cakes with?

Hoe cakes are great served with beans, such as pinto, lima, and black eye peas. They are also often served with vegetables, such as green beans, collards, or turnip greens. Some people prefer to enjoy hoe cakes for breakfast because of their similarity to pancakes.
