Smothered Cube Steak

This Smothered Cube Steak is a southern classic comfort food. Cube steak fried to perfection, then covered with onion gravy, making it tender and delicious.

Growing up this was one of my favorite meals my stepmom cooked. She cooked it about once a week. We all loved it so much and it was so easy and affordable to make. She would fry up the cube steak and then top it with onion and mushroom gravy and serve it over mashed potatoes.


In my early stages of learning to cook I tried to make Cube steak with gravy. I’m not sure what went wrong, but it did not turn out as I had planned, so for years I was so scared to even try to cook it again. I finally got in the kitchen one day and was determined to learn how to make the best cube steak, since my husband had been asking for it. Ever since that day this has been my go-to recipe for cube steak.

For the Gravy:

Instructions:

  1. Heat oil over medium high heat in a large skillet.
  2. Combine beaten eggs and milk in a shallow dish, add flour to another shallow dish.
  3. Season the cube steak with salt, pepper, onion powder, and garlic power.
  4. Dip cube steak into egg mixture, then into flour. Shake off any excessive flour.
  5. Fry cube steak for 3-4 minutes on each side, until golden brown and internal temperature reaches 145 degrees Fahrenheit. (Do not overcrowd the pan, you may have to cook cube steak in batches.)
  6. Remove cube steak from pan and place on paper towels to drain excessive grease.

How to Make Gravy:

  1. Wipe out the skillet or using a clean skillet, add butter and 2 tablespoons of vegetable oil. Add onions, cooking 5-7 minutes until translucent.
  2. Whisk in flour, creating a roux. Slowly whisk in the beef broth.
  3. Add Worcestershire sauce. Let sauce simmer for about five minutes until it has begun to thicken. Add Cube Steak to the pan of gravy.
