Slow Cooker Beef Stew

A savory southern-style beef stew that your family will love. This Slow Cooker Beef Stew is made with tender and juicy bites of beef, tender potatoes, Carrots, peas, and sautéed onions and celery.

This Savory Beef Stew recipe is the perfect slow cooker meal for those days when you are running short on time. With just 20 minutes of prep time, you can have this hearty stew ready just in time for dinner.


Beef Stew is great for the cooler months of the year. It’s one of the meals that will warm you from the inside out, on those cold winter evenings, but it is also great anytime of the year. It’s often served for Sunday dinners.

Beef Stew has always been one of my favorite stew recipes. The tender and juicy beef and vegetables slowed cooked in a beef broth gives the stew an amazing taste. This stew is very similar to Vegetable Beef Soup, but the sauce is thickened at the end of the cooking process.

Equipment Need:

Slow Cooker

Measuring Cup and Spoons

Knife for cutting vegetables.

Potato peeler (optional)

Ladle

Ingredients:

Beef– Beef chuck roast is the best beef to use for beef stew.

Olive oil-is used to Sautee meat and vegetables. You may also use vegetable oil, butter or another type of fat.

Onion– A large onion

Celery– 2 or more stalks of celery. I like alot of celery, so I always use a little extra.

Potatoes– The Type of potatoes you use is up to you. Red potatoes, Yukon potatoes, or russet all work fine.

Carrots– Slice carrots into bite sized pieces.

Peas– Peas is optional. Some people may prefer to leave the peas out.

Worcestershire sauce– Adds extra flavor to beef stew.

Beef Broth– adds flavor.

All-purpose flour– is used to make a slurry that thickens up the beef stew.

Bay Leaves-enhances the flavor.

salt and pepper to taste.

Directions:

  1. Cut meat into 1-inch cubes, discard any large fat pieces.
  2. Add olive oil to a large skillet over medium-high heat. Sprinkle beef with salt and pepper and add to the pan in batches, making sure not to overcrowd the pan. Brown beef on each side for about one minute, adding more olive oil if necessary. Transfer beef to slow cooker.
  3. Reduce heat to medium, add onions and celery and cook for 5 minutes. Add garlic and cook 30 seconds more. Transfer to slow cooker.
  4. Add diced potatoes, carrots, and bay leaves.
  5. Add beef broth and Worcestershire sauce.
  6. Cook on low for 7-8 hours or high for 3-4 hours or until vegetables are softened and fork tender.
  7. In a small bowl, whisk flour and ½ cup of the stew broth together making a slurry. Stir the slurry into the slow cooker. Cook on high for an additional 15 minutes.
  8. Add peas. Cook an additional 15 minutes,
  9. Remove bay leaves and enjoy.

Storage:

Beef Stew can be stored in the refrigerator for 3-4 days when stored in an airtight container. It will last in the freezer for up to three months when stored in a plastic, airtight container.

What to serve with Beef Stew:

Serve Beef Stew over rice or mashed potatoes or with a side salad, cornbread, or Biscuits.
