This potato salad recipe is perfect for picnics and barbecues! Potatoes, eggs, onion and spices mixed with Mayonnaise and mustard for the best savory potato salad. Great for BBQ’s and picnics.

Potato salad is a salad dish made from boiled potatoes, boiled eggs, onion, salad cubes, and mayonnaise.


My mom has been making this Potato Salad for as long as I can remember. She recently gave me the recipe and I started making it myself. I love this potato salad because it is so creamy, flavorful, and simple to make.

Ingredients:

Instructions:

  1. Wash potatoes, cut off ends and peel. Cut potatoes into 2-inch pieces. Place in a large pot of water and bring to boil. In another pot boil eggs. Cut up onion.
  2. When potatoes are fork tender remove from stove. Using a colander drain water. Once eggs are done peel the eggs.
  3. Add potatoes and eggs to a bowl, using a Potatoe masher, mash the potatoes and eggs.
  4. Add onion, mayonnaise, mustard, salt, pepper, and paprika. Stir together.
  5. Taste potato salad, if it isn’t creamy enough add more mayonnaise or mustard until the Potato salad is to your liking.
  6. Refrigerate until ready to serve. Potato salad is best served cold.

Substitutions

Salad Cubes can be substituted with relish if you prefer.

If you don’t like the mustard, you can leave it out and add more mayonnaise.

Storage

Potato salad can be refrigerated for up to three days. Make sure to cover the potato salad firmly with plastic wrap before placing in the refrigerator. This will keep it from drying out.

Tips for making this recipe:

If you prefer chunky Potatoe salad, you can skip the step of mashing the potatoes.

I recommend peeling the potatoes, although it is not necessary. When you leave the skin on the potatoes, it often loosens from the potatoes during cooking and can give your potatoes salad a not-so-great texture.
