Potatoes– large russet
Butter–Not only needed for added flavor, but butter also helps make the starchy texture of potatoes richer.
Sour cream–Adds richness and creaminess that is balanced with a tangy flavor.
Cream cheese– Adding Cream cheese is also a great way to add to the creaminess of mashed potatoes
Milk– Adds flavor and makes potatoes creamy.
Garlic powder– Adds the garlic flavor to potatoes.
Cheddar cheese (shredded)- You can also use other cheeses, such as mozzarella.
Bacon (cooked and chopped)-
Salt and Pepper
Step 1
Preheat oven to 350 degrees. Prepare a 9×13 baking dish with nonstick cooking spray.
Step 2
Wash, peel, and dice potatoes. Place them in a large pot. Cover with water and boil until potatoes are tender. Cook and chop bacon while potatoes are cooking.
Step 3
Drain potatoes and place them back in the now empty pot. Fold in butter, cream cheese, sour cream and milk.
Step 4
Add garlic powder, salt, pepper, 1 ½ cup cups shredded cheese, and half of the crumbled bacon. Pour into your prepared baking dish.
Step 5
Top with the remaining cheese and bacon. Bake for 20-25 minutes.
Store leftovers in an airtight container in the refrigerator. Leftover casserole will last three days in the refrigerator.
Making ahead: You can prepare this casserole up to two days in advance. Prepare casserole as directed, but do not bake. Wrap casserole with aluminum foil and refrigerator. When ready to serve, bake dish at 350 for 30-35 minutes, or until cheese is melted.
