Homemade Chicken Salad

Homemade Chicken salad is a great way to use up chicken you have leftover. With just a few simple ingredients mixed together you can have this simple and delilous chicken salad in 15 minutes.


Homemade chicken salad makes a great lunch, serve on Texas toast, croissant rolls, bread, sub rolls, or enjoy it as a snack with crackers, vegetables, or fruit.

Ingredients

Cooked Chicken– 2 cups of cooked chicken. Chicken needs to be cubed or shredded. You can use chicken you have left over from another recipe, canned chicken, rotisserie chicken, or baked chicken breast.

Onion A large onion

Celery Stalk of celery

Mayonnaise– A good quality brand on mayonnaise, such as Dukes.

Directions:

  1. Combine shredded chicken, chopped celery, and diced onion in a large mixing bowl.
  2. Stir in mayonnaise and salt and pepper.
  3. Taste. If chicken salad is not creamy enough to your liking, add ¼ cup more mayonnaise.
  4. Reirrigate for at least an hour before serving. Chicken salad is best served cold.

Variations:

There are many variations to this classic chicken salad recipe. Feel free to add grapes, nuts, or hardboiled eggs.

Storage:

You can store leftover chicken salad in an airtight container in the refrigerator. Chicken salad will last up to a week.
