Breakfast Casserole with Ham can be made ahead and refrigerated or frozen until ready to serve. When ready to serve the casserole, thaw overnight in the refrigerator, then place it in preheated oven and bake at 350 for 20-25 minutes or until the casserole is heated thoroughly. You may also heat individual slices in a microwave. I often make this casserole on Christmas Eve and refrigerator it overnight. Christmas morning, I place it in the oven to reheat and then my family has an amazing Christmas breakfast.

Ingredients:

Eggs– 12 eggs beaten

Ham– You can use leftover ham or buy diced ham for this recipe.

Cheese– It’s always best to buy block cheese and shredded it yourself. It melts better than pre-shredded cheese, but pre-shredded will still work just fine.

Milk– Whole milk, 2 percent, or heavy cream

Salt and Pepper– Salt and pepper to your liking.

Optional: You can add onions, bell peppers, tomatoes, or mushrooms.

How to Make Breakfast Casserole with Ham:

  1. Preheat oven to 350 degrees. Spray 9×13 baking dish with cooking spray. 
  2. In a large bowl whisk together eggs, milk, salt and pepper.
  3. Spread ham across the bottom of baking dish. spread ½ shredded cheese over the ham. Pour egg mixture over top. Sprinkle remaining cheese over top.
  4. Bake for 30-40 minutes or until the top is golden brown

Storing Leftover Casserole:

Cover leftover casserole in plastic wrap and store in the refrigerator for 3-4 days. Reheat individual servings in the microwave as needed. You can also place casserole in the freezer and freeze for up to 2 months. When you are ready to serve thaw casserole in refrigerator overnight and bake at 350 for 20 minutes or until heated thoroughly.
