Ingredients:

Directions:

  1. Preheat oven to 400 degrees Fahrenheit
  2. Wash the potatoes. Using a fork or skewer, poke some holes in each potato to let moisture escape while it cooks. Rub the potatoes all over with a light coating of olive oil, and season with salt and pepper. Wrap potatoes in aluminum foil, place on a baking sheet and place in preheated oven. Bake the potatoes for 1 hour to 1 hour and 10 minutes, until the potatoes are fork tender.
  3. Meanwhile dice up the bacon. Heat a skillet over medium heat and cook bacon until crispy, about 7 minutes.
  4. Once, potatoes are done, use tongs to remove them from the oven. Carefully unwrap potatoes. Using a knife slice the potato down the middle, to open the potato up.
  5. Now your potato is ready for toppings. First add butter and cheese, then add remaining toppings. Chili, and sour cream and top with bacon and green onions.
