Easy Sausage Breakfast Casserole can be oven ready in no time. It’s great for holidays when you are needing to feed a crowd. In addition to weekends, when you just want a quick and easy breakfast. Although, if you’re like me and love breakfast for dinner, you can add it to your dinner menu. Serve it up with some Grits or oatmeal in addition to some toast or biscuits and you have the perfect meal.

I am lover of any kind of breakfast foods. Especially when it involves sausage and cheese. Every Christmas morning, I make Sausage Quiche, which is very similar to this casserole. It has become a Christmas morning tradition. Between opening gifts, getting your home cleaned, and preparing dinner for guest, holiday mornings or hectic, more so if you have kids. So, the last thing you want to do is wake up and cook a big breakfast. I wanted to try something different this past Easter.
So, I decided to make this Easy Sausage Breakfast casserole. My family was not disappointment, they cleaned the pan and was looking for more. However, my son said it reminded him of an omelet. Now, I cook this casserole at least once a week. The best thing about Easy Sausage Breakfast casserole is that it can be made ahead of time. I usually make it the night before and just reheat it the next morning.

First, preheat oven to 350. Spray 9×13 baking dish with cooking spray.
Step 2:
Next, crumble sausage into a skillet on the stove. Cook until completely brown. Remove from heat. Drain Grease.
Step 3:
Then, in a large mixing bowl combine eggs and milk. Whisk well. Add Salt and Pepper.
Step 4:
Lastly, Add sausage into bottom of baking dish. Spread ½ shredded cheese over sausage. Pour egg mixture over top. Sprinkle remaining cheese over top. Bake 45 minutes.
Let cool 10 minutes and serve warm. Refrigerate leftovers.
Absolutely. It’s one of the reasons why I love this recipe. Make Easy Breakfast casserole the night before, let it cool completely, cover with aluminum foil or plastic wrap and refrigerate. When ready to serve heat in oven for 20-30 minutes until heated thoroughly. You can also cut into squares and heat in microwave for one minute.
