Cranberry Meatballs

These Cranberry Meatballs are a simple slow cooked recipe for delicious meatballs. They make for a simple and easy dinner or the perfect appetizer for your next occasion.

I enjoy cooking different flavors of meatballs, but these Cranberry Meatballs have become one of my favorites. They make a great dinner dish just add the meatballs with the sauce over mashed potatoes or rice.

Cranberry Meatballs are great for tailgating parties and cocktail parties. Thy can be made ahead, and you only need five ingredients.

Ingredients:

Meatballs– You can use pre-packaged frozen meatballs. Homestyle, Italian or turkey meatballs all work well for this recipe, or you can make a batch of these delicious homemade meatballs.

Chili Sauce– is used to add spice and flavor

Jellied cranberry sauce– cranberry sauce is what adds the most flavor to cranberry meatballs

Brown sugar-adds a touch of extra flavor and sweetness

Lemon juice– will provide structure to the jellied cranberry sauce, and it will also add a citrusy flavor.

How to make Cranberry Meatballs:

Step 1:

Place the cranberry sauce in a microwave safe bowl and microwave at 30 second intervals, until cranberry sauce is melted. 

Step 2:

Add chili sauce, brown sugar, and lemon juice. Stir until smoothed and mixed well. 

Step 3:

Add meatballs in the bottom of the slow cooker and pour the sauce over them.

Step 4:

Cook for 4 hours on low and serve.

Storage:

Making Ahead: Meatballs can be made two days in advance. One option is to prepare meatballs and ingredients in the slow cooker insert, then wrap saran wrap over the top and place the lid on it. You can now place the insert into the refrigerator until you’re ready to cook. Once you’re ready to cook the meatballs, place the insert into the slow cooker, cover, and cook on low for 4 hours.

You could also fully cook meatballs and place them into an airtight container and place them in the refrigerator and then just reheat in the microwave when you’re ready to serve.

Leftover Meatballs: Leftovers will last in the refrigerator for up to three days when stored in an airtight container. You can also freeze the meatballs for up to three months. When you are ready to use frozen meatballs place them in the refrigerator overnight so they can thaw. Once thawed you can reheat meatballs in the microwave, or the stop top in a pan over medium-high heat or in the slow cooker for 2 hours on low.
