What is Corn Casserole?

Corn casserole is a casserole dish consisting of cream style corn and whole kernel corn, jiffy corn muffin mix, and sour cream. It has creamy filling and cheesy cornbread topping. If may leave out the cheese if you prefer. I am a cheese lover, so I believe cheese goes well with everything, but you may not agree.

Difference between Corn Casserole and Corn pudding:

Corn Casserole and Corn pudding are often confused for being the same dish. The main difference is corn pudding has a softer texture such as pudding giving it the name of Corn pudding. Where Corn Casserole has a firmer texture.

Ingredients for Easy Corn Casserole Recipe:

  1. Corn– you will need one can of whole kernel corn and a can of creamy style corn. You will need to drain the whole kernel corn, but do not drain the cream style corn.
  2. Jiffy Corn Muffin Mix– You will need one box of Jiffy Corn muffin mix. Don’t have Jiffy Corn muffin mix? Don’t worry. You can find my cop cat version below.
  3. Sour Cream– Sour cream is used to keep the casserole moist and tender.
  4. Butter– As for any casserole you will need butter.
  5. Cheddar Cheese(optional)- You may choose to not add cheese and that is just fine. Either way you will still have an amazing corn casserole.

How to make Copycat Jiffy Corn Muffin Mix.

  1. Combine flour, cornmeal, sugar, baking powder, and salt into a large mixing bowl.
  2. Whisk in the vegetable oil until the dry mixture is smooth and the lumps are gone.

Directions for Easy Corn Casserole Recipe:

Now that you have all your ingredients together let’s make simple corn casserole. First you will add the two cans of corns to a large mixing bowl. Remember do not drain the cream corn but do drain the whole kernel corn. Next, add the corn muffin mix and sour cream and melted butter. Once everything is mixed well, transfer it to your greased baking dish. Bake in preheated in for 45 minutes or until the top is golden brown. Lastly you will top the casserole with cheese. Add back to the oven for 15 minutes until the cheese has melted and started to bubble. Casserole will be very hot, when removed from the oven. Let cool for 10 minutes before serving.

How to store leftover Casserole:

Store in an airtight container in the refrigerator for up to two days.

Can Casserole be made ahead?

Casserole can be made two days ahead, covered in plastic wrap and refrigerated until ready to serve. Heat casserole in the oven. For individual servings you can microwave corn casserole for 1 minutes.

  • 15.25 oz. whole kernel sweet corn (drained)
  • 8.5 oz. Jiffy corn muffin mix
  • 8 oz. sour cream
  • 1 stick butter (melted)
  • 1 cup cheddar cheese (shredded)

Instructions

  1.  Add the two cans of corns to a large mixing bowl. Remember do not drain the cream corn but do drain the whole kernel corn.
  2.  Add the corn muffin mix and sour cream and melted butter and mix well. 
  3.  Transfer it to your greased baking dish. Bake in preheated in for 45 minutes or until the top is golden brown.
  4.  (optional) top the casserole with cheese. Add back to the oven for 15 minutes until the cheese has melted and started to bubble.
  5. Let cool for 10 minutes before serving.
