Remember do not drain the cream corn but do drain the whole kernel corn. Next, add the corn muffin mix and sour cream and melted butter. Once everything is mixed well, transfer it to your greased baking dish. Bake in preheated in for 45 minutes or until the top is golden brown. Lastly you will top the casserole with cheese. Add back to the oven for 15 minutes until the cheese has melted and started to bubble. Casserole will be very hot, when removed from the oven. Let cool for 10 minutes before serving.
Store in an airtight container in the refrigerator for up to two days.
Casserole can be made two days ahead, covered in plastic wrap and refrigerated until ready to serve. Heat casserole in the oven. For individual servings you can microwave corn casserole for 1 minutes.
