Chipped Beef on Toast (S.O.S)

Chipped beef on toast is a dish comprising a white sauce and rehydrated slivers of dried beef, served on toasted bread. Chipped beef is also often served on bagels, English muffins, biscuits, home fries, rice, mashed potato and in casserole. It is a common tradition in all branches of the United States Armed Forces.

Chipped Beef on Toast (SOS)

In the United States, chipped beef on toast was commonly served to service members of the United States Armed Forces from World War I through Vietnam. It was considered emblematic of the military experience and consequently also served to Boy Scouts of the era. In American military slang it is commonly referred to by the dysphemism “Shit on a Shingle” (SOS).

As a teenager I was spending the weekend at my parents’ friend’s house. One morning for breakfast the friend said we were having (SOS). I thought it was funny because I had never heard of it before. It turned out to delicious. For years I thought about that dish, but I didn’t know the name of the dish except that it was called (SOS). A few years ago, I started searching for the recipe online and found that its actually name is chipped beef. Then eventually I ran into my parent’s old friend and was so excited when she shared the recipe with me. Since then, I make it often for breakfast.

How to make chipped beef.

  1. Cut the beef strips into small pieces or strips. I like to cut the beef in about ½in strips, but you may prefer small pieces.
  2. Place a large skillet over medium heat. Add the butter. Once melted, whisk in the flour. Cook about 2 minutes until flour is golden brown in color.
  3. Slowly whisk in milk (about ½ cup at a time). Then add thyme and pepper. Simmer to thicken about 2-3 minutes. Then add in dried beef. Cook another 2-3 minutes to warm the beef and thicken.
  4. Meanwhile toast the bread in a toaster. Once done pour chipped beef gravy over toast and enjoy.

Storage:

Chipped Beef can be stored covered in the refrigerator for up to three days.
