Looking for a simple dinner for busy nights? This Chicken Casserole Recipe is so easy to make with shredded chicken, cream of chicken soup, sour cream, butter and stuffing mix.

The Chicken Casserole is both creamy and crunchy. The soup mixture in the middle makes it creamy, and stuffing topping makings it crunchy, when the flavors are blended together you will get the best Chicken Casserole.


Chicken Casserole is great for busy nights, potlucks, church gatherings that require a covered dish, or make it can be made as side dish for holidays.

Chicken Casserole is also great to make if you have leftover chicken from another recipe, you can also change it up and use leftover turkey from the holidays and make a turkey casserole.

Instructions:

  1. Preheat oven to 350 and spray a 9×13 baking dish with cooking spray.
  2. Add stuffing mix to a large mixing bowl.  Pour melted butter over top and stir.
  3. In another mixing bowl add cream of chicken soup and sour cream, combine.
  4. Add half of stuffing mix to the bottom of baking pan.  Add the chicken on top, pour the soup mixture over top of chicken and cover with the remaining stuffing mix.

Variations:

Soups: You can replace one can of Cream of chicken soup for cream of mushroom or cream of celery.

Meat: You can use rootsier chicken, or any other leftover chicken you may have. You can also use turkey in the place of chicken and have a Turkey Casserole.

Veggies– You may add frozen vegetables to your casserole, just rinse them under cool water so they will thaw before adding them on top of the shredded chicken.

Stuffing: I used fresh herbs stuffing made by pepperidge farms, but you can sway out the brand of stuffing or even make your own homemade stuffing.

Storing Leftovers:

Leftover casserole can be stored in a container with a lid in the refrigerator for up to four days. When ready to serve reheat individual pieces in the microwave for 1-2 minutes or reheat the casserole in an oven safe dish for 20 minutes at 350 degrees.
