Chicken and Dumplings is a popular comfort food dish, commonly found in the southern and midwestern united states, that is also attributed to being a French-Canadian meal that originated during the great depression

Chicken and dumplings are a dish prepared with simmered chicken, broth, multiple dumplings, and salt and pepper. Sometimes finally chopped vegetables such as carrots, celery or peas are added.

How to make Chicken and Dumplings:

Making the Soup:

  1. In a large heavy bottom pot, melt butter over medium-high heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until vegetables are soft. Add garlic and cook for 1 minute more.
  3. Add Chicken broth. Bring to a boil.
  4. Reduce heat to low. Add shredded chicken. Cover and simmer for 30 minutes. While simmering make the dumplings.

Making the Dumplings:

  1. In a large mixing bowl, combine flour, baking powder, salt and shortening with a fork until shortening is mixed in. 
  2. Add milk a little at time and mix until well combined. 
  3. Knead a few times on a floured surface until dough is smooth.
  4. Flour your surface and roll the dough out to ⅛ thick. If dough is sticking sprinkle more flour onto the dough.
  5. Drop dumplings one by one into simmering post.  Let dumplings simmer about 15 minutes. 

Storing Chicken and Dumplings:

Chicken and dumplings can be stored in an airtight container in the refrigerator for up to three days. To reheat: transfer individual servings to a microwave safe dish and microwave for 2 minutes.

Chicken and dumplings can also be frozen a vacuum sealed bag for up the three months. To thaw chicken and dumplings, store in the refrigerator overnight.

Ingredients

4 cups cooked chicken, shredded

4 stalks celery

½ cup onion, diced

8 cups chicken broth

salt & pepper to taste

parsley (optional)

Dumplings:

2 cups self-rising flour, plus extra for dusting

3 teaspoons baking powder

⅓ cup vegetable oil

¾ cup milk

Instructions

  1. In a large heavy bottom pot, melt butter over medium-high heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until vegetables are soft. Add garlic and cook for 1 minute more.
  3. Add Chicken broth. Bring to a boil.
  4. Reduce heat to low. Add shredded chicken. Cover and simmer for 30 minutes. While simmering make the dumplings. (Recipe below)

  5. Cut dough into 1″to 2″ stripes.

 

Drop dumplings one by one into simmering post.  Let dumplings simmer about 15 minutes.
