This Cheeseburger Soup is a hearty soup that is loaded with meat, vegetables, spices, and cheese giving you all the flavors of a cheeseburger, but in the form of a soup.

Cheeseburger Soup is the perfect meal on those cold chilly nights when you’re looking for a recipe that will warm you up. It has all the flavor of a cheeseburger that has been transformed to a delicious bowl of soup.


Cheeseburger Soup is also great for feeding crowds, making it perfect for potlucks.

Meat

This cheeseburger soup calls for ground beef, but you can substitute the ground beef for ground turkey or ground sausage.

Vegetables

Onions, Carrots, Celery, and potatoes are the most common vegetables you will find in Cheeseburger soup, but you can also add pickles, diced tomatoes or corn.

Seasonings and Spices

Dried basil, parsley, and salt and pepper give cheeseburger soup the perfect flavor.

Other ingredients

Butter, All-purpose flour, Chicken broth, Shredded cheese, Milk, and Sour Cream are used to make the soup creamy.

Optional toppings

You can top off this soup with additional shredded cheese or sour cream. Crumble bacon and croutons are also great toppings.

How to make Cheeseburger Soup:

  1. In a large pot over medium heat, cook and crumble beef until no longer pink, (about 6 minutes) drain and set aside.
  2. In same saucepan, melt 1 tablespoon butter over medium heat. Sauté onion, carrots, celery, until vegetables are tender, about 10 minutes. Add potatoes, ground beef, broth, parsley, and basil; bring to a boil. Reduce heat; cover and simmer until potatoes are tender, 10-12 minutes.
  3. Meanwhile in a small saucepan, melt remaining butter and whisk in flour, cook until browned. 
  4. Slowly whisk in milk, cook until mixture starts to bubble, then stir in shredded cheese. 
  5. Carefully add cheese mixture to the soup. Stir to combine. Bring soup to a simmer and remove from heat. 
  6. Stir in Sour Cream.
  7. Add toppings and enjoy.

Storage:

Leftover Cheeseburger Soup can be refrigerator in a container with a lid. Soup can be refrigerated for up to three days or frozen for up to three months.

To thaw frozen soup, place soup in the refrigerator overnight.

To reheat soup, place soup in a pot and warm on stovetop.

3 cups chicken broth
