Butterscotch haystacks are a cute and easy no bake dessert. Haystacks are a popular easter dessert, known as bird nest cookies.


Although popular for Easter then can be enjoyed any time of year. They make great snacks, desserts, or Christmas appetizers.

  1. Line a baking sheet with wax paper.
  2. Add butterscotch chips and peanut butter to a microwave safe bowl. Microwave at 30 second intervals until butterscotch chips have completely melted.
  3. Stir in the chow mien noodles.
  4. Using a spoon, scoop the noodles into bite size cookies and place them on the wax paper. 
  5. Allow the cookies to set until the butterscotch is hardened. You can speed up this process by sticking the tray in the freezer or fridge.

Storage:

Store haystacks in airtight container (Zip-lock bags work great) in the refrigerator for up to three days.

Variations

You can add peanuts or marshmallows to haystacks.

For chocolate haystacks use chocolate chips in place of butterscotch.
