Banana Muffins are simple, delilous, and Perfect to use up those over-ripe bananas. They make the perfect grab and go breakfast or afternoon snack.
Preheat oven to 350. Melt butter. Place pealed banana in a large bowl. Using a fork mash banana up. Add egg, flour, sugar, salt, baking soda, baking powder, melted butter. Bake for 25 minutes.
You can make muffins ahead of time. I like to individually muffins in in saran wrap for a easy grab and go breakfast.
